For the zucchini slices, beat eggs and sugar until foamy. Slowly pour in the oil and continue beating the mixture.
Mix the dry ingredients and stir into the egg mixture together with the grated zucchini.
Spread the mixture on a baking tray and bake at 170 degrees for about 30-35 minutes. Spread the cooled cake generously with currant jelly and cover with chocolate icing.
Preparation Tip:
The mixture makes a tray, but you can also bake it in a cake pan. If you like, you can serve the zucchini slices with whipped cream.
