Instructions:

Put the flour in a suitable bowl and make a dent in the center. Crumble the yeast into it. Heat the milk and pour it into the yeast. Stir with a little flour and sugar (1) to a paste. Let rise in a warm place for approx. 15 min. with lid closed.

Melt fat and whisk with egg, sugar (2) and salt. Add to the dampfl form and knead with the dough hooks to a smooth dough. Let rise again for 15 minutes.

Divide yeast dough into 10 cm long rolls. Roll each roll into a small pretzel and place on a greased baking sheet.

Mix egg yolk and condensed milk and brush the pretzels with it.

Bake in a heated oven (electric stove: 200 °C /

gas stove: level 3) for 15 to

20 minutes and serve while still lukewarm.

Bring wide saucepan to the boil, stir until the baking soda is completely dissolved. Place 1-2 pretzels at a time in the baking soda for 30 seconds. Gently submerge with slotted spoon repeatedly to moisten surface as well. Remove the pretzels. Drain them a little and place them on the baking tray.

Finally, sprinkle with coarse salt. If necessary, carefully brush the surface with sodium bicarbonate to make the salt adhere better.

Place the pretzels on the middle rack in the cold oven and roast at 225 °C for 25-half hours until brown and crispy.
