Instructions:

Whip the yolks with the sugar and 1 tbsp. water in a hot water bath until thick and fluffy, remove from the water bath and continue to whip until cool. In the meantime, whip the cream with the milk and stir into the yolks. Pour in the chocolate in small pieces and let it melt.

Pour the mixture into an aluminum bowl and set in the freezer or ice cream maker, stirring constantly.

To serve, garnish with white and dark chocolate flakes. Goes well with: Raspberry puree or strawberry puree.

Tip: Use better chocolate – the more delicious the result!
