For the Italian-style rolls, mix the flour with dry yeast in a bowl. Add sugar and salt. Slowly add the olive oil and lukewarm water.

Knead the dough well with your hands until you have a smooth dough. Grease a bowl with a little oil and pour in the dough.

Cover with plastic wrap and let rise in a warm place for about 1 hour. Then knead the dough well again and let it rise again for about 1 hour.

Preheat the oven to 230 degrees. Peel the garlic cloves and press them through a garlic press. Mix the Italian herbs with the Parmesan cheese and the pressed garlic.

Roll out the dough and spread the cheese and herb mixture on top. Roll up the dough and cut 12 equal portions. Shape them into loaves and place them on a baking tray lined with baking paper.

Cut the surface twice with a sharp knife. Beat the egg and brush the rolls with it. Bake the rolls in the preheated oven for about 10-15 minutes until golden brown.

Then leave to cool well on a cooling rack.

Preparation Tip:

The Weckerl can also be enjoyed warm. If you don't like garlic, leave it out. Chopped tomatoes preserved in oil are also particularly good in the pastry. Fresh herbs provide more flavor.
