Instructions:

For the tomato bread with Dijon tofu, first prepare the tofu marinade. Mix the mustard with olive oil, soy sauce, garlic and thyme to a smooth cream. Brush tofu slices on both sides and let marinate for a while. Place tomatoes briefly in boiling water, peel and cut into thin slices. Heat 1 tsp olive oil in a non-stick frying pan. Place bread in portions on large plates, spread tomatoes on top, add spring onions and tofu.
