For stuffed peppers wrapped in bacon, cut peppers (different colors) in half lengthwise, remove stalk and seeds. Chop garlic very finely. Mix horseradish and herb cream cheese, add crème fraîche and garlic and mix well.

Preheat oven to 200 degrees top-bottom heat. Fill bell pepper halves with cream cheese cream a little below the edge, wrap each with 4 slices of pancetta.
