Rinse potatoes, remove peel, place in cold water until ready to use to prevent browning. Grate raw potatoes into a baking bowl filled with water. Add a dash of vinegar to the water to prevent discoloration. Squeeze the grated potatoes firmly (in a potato bag or similar). Prepare the squeezed potato mass with the settled potato starch. Pour boiling milk on the spot over the potato mass. Add cooked, peeled and squeezed potatoes, season with salt and mix into potato dough.

Form dumplings from the dough with wet hands. In the middle of each dumpling place a few roasted breadcrumbs. Reshape dumplings briefly. ~Make a test dumpling.

Put dumplings into boiling water and cook in about 15 to 20 min. with the pot open (do not make more).
