For the railwaymen, quickly knead the ingredients for the shortcrust pastry into a dough and let it rest in the refrigerator for 1 hour. Roll out dough thinly, cut into 5 cm wide strips and place on baking sheet.
Heat nuts, cinnamon, sugar and egg whites in a water bath to about 50°, stirring constantly. Then remove from the water bath and continue stirring until cool. Pipe the mixture on both sides of each strip of dough.
Bake the bahns at 160° for about 20 minutes. After cooling, fill the center with jam and cut into 2 cm wide strips.
