For the quince pieces, peel and core the quinces, cut them into fine wedges and steam them with the sugar, cinnamon and lemon juice in very little water until soft.

When the quinces are soft, pour them into a sieve and drain well. Cut the puff pastry into 6 pieces. Divide the drained quinces among the 6 pastry corners.

Now fold the pastry over the quinces and press the edges down with a fork. Place on a baking tray, sprinkle with the beaten egg and bake at 175 °C for 15 to 20 minutes.

Preparation Tip:

The quince particles also refine with vanilla. A special combination of flavors.
