Dissolve the yeast in a little lukewarm milk, mix with 2 – 3 tablespoons of organic buckwheat flour and let rise at room temperature for 5 minutes. Stir in the rest of the flour, the yolks, melted butter and pumpkin meal, add salt. Beat the egg whites until stiff and fold into the dough. Then add the whipped cream. Let rise again for about 10 minutes. Now form the dough in a coated pan with a tablespoon to about 5 cm small blinis and slowly bake in a little oil on both sides.
