Lightly roll port wine, spices and rock candy for 10 min. Rinse pears, cut in half, remove core. Pears in the port wine broth form, 6 to 8 min in it soften. Take out pears, put them on a tray covered with aluminum foil. Cut cheese into slices and place on pears. Let the cheese melt under the heated broiler. Boil the broth with cranberries. Serve the pears garnished with mint.

Serve with the port wine roast broth.
