# What You Need:

→ Cookies

01 - 24 mini chocolate chip cookies, store-bought or homemade

→ Filling

02 - 1 pint (16 oz) premium vanilla ice cream, slightly softened

→ Decoration

03 - 1/2 cup red, white, and blue sprinkles

# How To Make It:

01 - Line a baking tray with parchment paper to prevent sticking during freezing.
02 - Place half of the cookies (12 pieces), flat side up, on the prepared tray with even spacing.
03 - Using a small ice cream scoop or tablespoon, place one scoop of softened vanilla ice cream onto each cookie base.
04 - Top each ice cream portion with a second cookie, pressing gently just until the filling reaches the edges.
05 - Immediately roll the sides of each sandwich in the sprinkles to coat the exposed ice cream completely.
06 - Return sandwiches to the lined tray and freeze for at least 1 hour until completely firm.
07 - Serve directly from the freezer for best texture and consistency.

# Handy Tips:

01 -
  • They come together in literally twenty minutes flat
  • The sprinkle coating makes everything feel festive without any actual decorating skills required
02 -
  • Work quickly once the ice cream comes out of the freezer
  • The sprinkles only stick to the exposed ice cream edges
03 -
  • Soften ice cream for exactly 10 minutes on the counter
  • Use a small cookie scoop for uniform portions
