Grate the outer and inner white peel from 2-4 oranges (depending on how bitter you want the jam to be) with a grater. For the other oranges and lemons, take only the outer peel, peel off the white and discard. Cut the flesh of all the oranges and lemons into very fine pieces (remove the pips first).

Add the pulp to the grated form and fold in the sugar. Stir gently until the jam is smooth (skim from time to time). Fill, tie.
