For the nut bread with ricotta spread, finely grate the carrot and mini cucumber, sprinkle with lemon juice, mix with the ricotta, season with galangal and vegeta. Spread a thick layer on each slice of nut bread and place a second slice on top.

The ricotta spread does not necessarily need to be spiced. Instead of galangal, a pinch of ginger powder is also tasty.
