1. make the pasta al dente in a large saucepan with bubbling water. Drain and keep warm.

If you are using saffron for this dish, soak it in a small amount of hot water for 5 minutes. While the pasta is cooking, bring the whipping cream, clear soup and lemon zest to a boil in a large saucepan. Stir occasionally.

Simmer the sauce over low heat for 10 minutes and season to taste with salt and freshly ground pepper. Add the cooked pasta and continue to cook gently for another 2-3 minutes.
