Instructions:

Finely chop the spring onions, also finely chop the garlic cloves and crush them with a little salt. Blanch (scald) the tomatoes briefly in hot water, peel and cut into cubes. Cut the onion into rings. Halve the chili pepper, remove the seeds and also cut into fine rings. In a wok or heavy skillet, heat the peanut oil. Add the shrimp together with the spring onions and garlic and sauté briefly. Then flavor with oyster sauce, sesame oil, salt as well as pepper and fry for about 2-3 minutes more. Remove the shrimps from the pan. Now add tomatoes, onions as well as chili and stir everything well. Pour in beer and let everything simmer, covered, for about 10 minutes. Add the shrimps and let them simmer in the beer for a short while. Remove from heat and stir in the cress. Serve in bowls and sprinkle with the roasted garlic.
