For about 25 Kaspressknödel put the dumpling bread in a bowl. Whisk milk and egg, add salt, pepper, caraway seeds and spread over the dumpling bread. Crumble gray cheese, grate cheese, add chives, parsley and stir gently.

Meanwhile, finely dice the onion and fry in oil until golden. Let cool and add to the dumpling mixture. Mix carefully and gently with your hands and please do not press. Season to taste and let it stand for a while.

Form dumplings with wet hands and then gently squeeze, then they also remain “fluffier” and are not so firm! Fry in oil or clarified butter until golden brown.

Preparation Tip:

No matter which dumpling mass, please never work with flour, even if it is written in the recipe, otherwise the dumplings will be too firm!
