Peel the pellet from the sausage. Score sausage in diamond shape. Insert a clove into the center of each diamond. Place sausage in roasting pan. Add chopped tomatoes and onion and fat as well. Roast in oven at 175 degrees Hl for about 1 hour. Bring sausage roast whole on a platter to the table. Extinguish roast and briefly reduce and use to make a sauce.
