Instructions:

Heat oil in a frying pan, sauté onions and peppers for 4-5 min at medium temperature until soft. Add garlic and parsley and cook for 2 minutes. Add tomatoes and chili, and let everything bubble together. Reduce temperature and lightly bubble for 6 min.

2.Using a spoon, press two indentations into the tomato mixture.

Form an egg into each indentation and continue cooking until eggs are firm. 3.Place tortillas on a baking sheet lined with aluminum foil. Place half of the tomato mixture with one egg on each tortilla, sprinkle with salt, pepper and cheese. Garnish with finely chopped anchovies and capers. Heat in oven for 2 min until cheese is melted.
