Sort out, clean and rinse the berries. Cut strawberries into quarters.

Mix sparkling wine, powdered sugar, yolks, juice of one lemon and zest, whip over steam until creamy. Remove the mixture from the stove, whip until cool. Stir in curd cheese, whipped cream and cornstarch.

3. form gratin mixture into a shallow gratin dish (approx. 30 cm long). Spread fruit evenly on top and bake gratin under oven broiler for 5-7 minutes until surface turns golden yellow.
