For beef fillet with herb crust cut the beef fillet into 4 pieces, season with salt and pepper and coat with mustard. Melt the butter, mix the herbs with the breadcrumbs and the parmesan, salt , pepper and simmer a little.

Heat the oil in a pan and sear the meat slices on both sides for about 90 seconds. Place the seared steaks in an ovenproof dish and coat them thickly with the breading.

Place in the oven at 150° for about 15 minutes and serve the herb-crusted beef fillet immediately.
