Instructions:

Place the chicken soup, diced potatoes and 1 tbsp rice wine vinegar in a pot and bring to a boil. Reduce the temperature until the clear soup is just simmering.

Mix the cornflour (maizena (cornstarch)) with the water and then stir into the hot clear soup.

Bring the clear soup to a boil one more time and stir until it thickens, then reduce the temperature until it just simmers one more time.

Place the sliced pork in a suitable bowl and season with the remaining rice wine vinegar, soy sauce and sesame oil.

Add the pork, carrot strips and ginger to the clear soup and simmer for ten minutes. Stir in the scallions, red bell pepper, and bamboo shoots. Make another 5 min.

Pour the soup into preheated soup cups and bring to the table hot.

Add finely chopped red chili or 1 tsp. chili seasoning, if desired.
