For the curd poppy seed tart, line a 26 cm springform pan with baking parchment and preheat the oven to 180 °C. Core the apricots and cut into wedges.

Cream the butter and sugar and beat in the eggs one at a time. Stir in the custard powder, coconut flour, vanilla, baking powder, curd cheese, mascarpone and poppy seeds.

Pour into the mold and spread the apricots on top. Bake on the middle rack for about 50-60 minutes until the top is lightly browned.

Open the oven door and let the finished cake cool in the oven.

Preparation Tip:

The curd poppy seed cake can also be prepared with other fruits. Other variants for the fruit layer: peaches, cherries, berries, apples or pears. As an alternative, use white poppy seeds (see photo), so that the curd poppy seed cake is particularly fine!
