For the ciabatta, put flour in a bowl and make a small hollow. Crumble the yeast into it and pour some lukewarm water over it and let it dissolve.
Add all remaining ingredients and knead well for about 5 minutes. Cover and let rise in a warm place for about two hours. Then knead the dough well again with your hands.
Roll out into a rectangle on a floured work surface, fold a few times, place on a baking sheet lined with baking paper and let rise for another 30 minutes.
Bake in a preheated oven at 200 °C for about 35 minutes. While still warm, brush the ciabatta with a little water and allow to cool thoroughly.

The ciabatta can be prepared individually also with chopped olives, dried tomatoes, etc..
