Pit the cherries and rinse well. Drain the curd well.

Beat the eggs with the sugar until foamy and fold in the curd cheese with the zest of one lemon and the cherries.

Melt the butter in a saucepan.

Lay out the strudel dough on a tea towel and brush with ¾ of the melted butter. Sprinkle breadcrumbs on the dough. Spread the curd mixture on one side, fold in the ends and roll up lengthwise.

Brush with the remaining butter and bake in a preheated oven at 200 °C convection oven for 30-40 minutes.
