A simple but delicious cake recipe:

Place 1 3/4 cups of flour in a large wide bowl, make a bulge in the center and pour in rum, eggs, egg yolks, 1 tbsp powdered sugar and salt. Mix with your hands or with a fork until all the flour has been worked in together and you can form a ball of dough. Sprinkle the remaining one-fourth cup of flour on a board or cookie sheet and knead the ball for 10 minutes, until the additional flour is also incorporated and the dough is smooth. Cover with a wet dishcloth and rest for 30 min. Heat 1 cup oil or 250 g shortening in a deep fryer or large heavy saucepan to 160 degrees. Roll out a quarter of the dough at a time on a floured board or roll-out cloth. When paper thin, cut dough with a wheel or sharp kitchen knife into strips 15 to 18 inches long and 1 and one-quarter inches wide. Tie the strips into loose knots and finish baking for 4 or 5 minutes or two each, until golden brown. Using tongs or a slotted spoon, transfer the cenci to paper towels. Do the same with the rest of the dough. Sprinkle with powdered sugar before serving.
