Boil salted water. Clean and rinse the cauliflower and cook in boiling water for 20 minutes. Drain in a sieve, then divide into roses. Puree half of the cauliflower florets with a blender, mix with eggs and milk, season with salt, pepper and nutmeg. Cut the ham into cubes and mix it with the peas into the puree. Fill into a gratin dish, press the remaining cauliflower florets into the puree, grate the cheese over it. Bake in a heated oven at 200 degrees for 15 minutes. Sprinkle with chopped parsley before serving.

Tip: It is best to use your favorite ham – then your dish tastes twice as good!
