For the caramelized pineapple with curd cream, cut pineapple into small pieces. Melt brown sugar in a pan, deglaze with pineapple juice.

Add pineapple pieces and rum and let caramel dissolve over low heat. Stir in almonds and let cool. Mix curd with yogurt, vanilla syrup and vanilla sugar.

Put half of the pineapple in dessert glasses, spread curd cream on top and spread the remaining pineapple with the juice on top.

Serve the caramelized pineapple with curd cream.
