For the Tarte Tatin, peel the apples, quarter them, core them and cut them into thin slices. Sprinkle with the freshly squeezed lemon juice to prevent them from turning brown.

Caramelize the powdered sugar with 4 tablespoons of water in a tart pan, add the butter and let it melt. Now add the apple slices and let them steam briefly.

Cut the puff pastry into shapes and place on top of the apples. (Goes easiest with a pasta walker.) Bake covered like this for about 40 minutes at 180 °C.

Allow to cool in the pan for about 10 minutes and then turn out. Sprinkle with grated vanilla and granulated sugar.

Preparation Tip:

Sprinkle the tarte tatin with lavender sugar - also tastes wonderful! Cinnamon also goes wonderfully with the apples.
