For Tofu Sweet and Spicy, squeeze the tofu well. Make sure that it does not break. It is best to wrap the tofu in a tea towel and put something heavy on it for 15-30 minutes.
Cut tofu into 1×1 size cubes and roll in 1 tablespoon of cornstarch. Heat oil in a pan and fry the tofu pieces in it until golden brown.
Drain the tofu on a paper towel. Finely chop the garlic and ginger. In the pan, boil the cup of water and add all the ingredients except the tofu and the cornstarch-water mixture.
Simmer for a few minutes. Add the cornstarch-water mixture and bring to a boil again. Remove from heat and let cool for 1 minute.
Add the tofu pieces and roll in the sauce. Arrange the sweet and spicy tofu and serve.
