Instructions:

For the whole spelt pasta with pears and walnuts, first prepare the dough. Sift the flour and knead with the eggs, salt and olive oil to a firm, smooth dough.

Shape into a ball and wrap in plastic wrap. Let rest for about 30 minutes and place in the icebox for another 15 minutes.

Meanwhile, peel and core pear and divide into bite-sized pieces. Melt sugar in a pan, add pears and let caramelize briefly. Deglaze with lemon juice and set aside.

Roll out pasta dough on oiled work surface to 1 mm thickness and wheel into noodles about 1 cm wide. Place noodles in boiling, salted water and boil for 1-3 minutes until bubbly. Leave to stand in the water for approx. 10 min.

Finely chop shallot and sauté in hot olive oil until translucent. Add milk and melt Gorgonzola pieces in it. Season with pepper and salt if necessary.

Add the cheese sauce to the pear, stir and simmer for 2-3 minutes. Strain the finished pasta, mix with the sauce and sprinkle with the coarsely chopped walnuts.

Serve the whole spelt pasta with pears and walnuts.

Preparation Tip:

If you don't have time to make the pasta yourself, you can of course use store-bought pasta for the whole spelt pasta with pears and walnuts, according to taste.
