For baked crackers, boil the potatoes until soft. Then peel and press through a potato ricer onto a pasta board. Allow to cool slightly.
Then add the flour and the semolina. Make a well and add the egg and the soft butter cut into pieces.
Add salt and knead everything into a dough and let it rest in the refrigerator for 1 hour. After resting, form the dough into a roll and cut into 8 equal pieces.
Roll each of these out into a patty and put a quarter of peeled cracker in each piece, folding the sides together and shaping between the palms of your hands.
Then bake in a little oil on both sides until golden brown. Serve the baked crackers.
Preparation Tip:
Baked crackers are best served with salad. Sauerkraut also goes very well with it.
