For the ham and green bean quiche, first prepare a pizza dough: To do this, mix flour, yeast, salt and oil and knead with 100 – 200 ml of warm water to form a smooth dough. Cover and let it rise for an hour.

In the meantime, finely dice the onion and sauté in a little olive oil. Allow to cool. Cut ham into fine cubes. Cut cooked potatoes into flakes, cut cooked runner beans into pieces about 1 to 2 cm long.

Mix the eggs with crème fraîche (or cream cheese) until smooth, season with salt and pepper. Add the grated cheese and the chives (alternative: mountain cheese).

Butter a quiche mold or round cake pan. Roll out or pull the yeast dough thin and line the mold with it. Spread the onions, ham, green beans and potatoes on top.
