Try this delicious pasta dish:

Soak mushrooms covered with warm water for about fifteen minutes. Drain and cut into thin strips. Remove peel from carrots and cut diagonally into narrow slices.Coarsely chop cilantro greens, except for a few leaves.

Bring stock to a boil. Do carrots in it over medium heat for ten min.

Heat ghee in a saucepan, sauté mushrooms and chili in it. Extinguish with soy sauce and vegetable soup. Add the glass noodles and cook for five minutes. Add chopped cilantro, season with salt, garnish with remaining cilantro greens.
