For the quick tomato soup, first peel and chop the onions. Finely blend the tomatoes with juice in a food processor or with a hand blender.
Heat the tomato broth with the onions, soup and oregano, thyme and basil and simmer gently for a few minutes. Bring the quick tomato soup to the table, sprinkle with fresh herbs if desired.
Preparation Tip:
White bread croutons go wonderfully in the quick tomato soup.
