Instructions:

Preheat oven to 170 °C.

Mash the goat’s cream cheese with a fork. Season with pepper [1], fold in the egg yolk, fresh finely chopped mint leaves and chili.

Roll out puff pastry about Three mm thick and cut into twelve cm squares. Spread the cream cheese mixture evenly in the center of the pastry pieces. Brush the edges of the dough with the beaten egg and fold the puff pastry. Prick the pastry parcels with a fork, brush with the beaten egg, sprinkle with sesame seeds and slide into the preheated oven for about Twenty minutes until the rolls are golden brown.

Mix the quartered cocktail tomatoes with spring onions and chopped herb leaves. Make a salad dressing with oil, pepper, salt, vinegar and sugar and dress the lettuce with it.

Arrange the puff pastry rolls with the tomato salad.

[1] Salt is not really necessary, as fresh goat cheese is usually sufficiently salty.
