For the baked vegetable casserole, sauté the finely chopped onion and add the vegetables. When the vegetables are soft, add the Parmesan cheese, salt, pepper and nutmeg.
Sauté everything for a while. Heat the oven to 200°C. Mix finished vegetable mixture additionally with an egg and a cup of sour cream or yogurt.
Put ready vegetables in a baking dish and pour pizza cheese over them. Place in oven and bake for about 30 minutes or until cheese is brown.
Finally, serve the baked vegetable casserole with a tomato-cucumber salad with pumpkin seed-vinegar-vegetable mixture, and a yogurt-sour cream-garlic sauce.
Preparation Tip:
If you can't do without meat, you can also mix minced meat or shrimp into the baked vegetable casserole.
