For the almond cookies, mix the dry ingredients on a baking board. Cut the butter into pieces and spread on top. Knead, add the egg yolks and make a smooth dough.
Spread the dough with a spoon on the wafers and press a whole almond in the center. Bake in the oven for 20-25 minutes at about 180 degrees.
While still hot, spread with apricot jam.
